Worth A Try!

Have you noticed that I don't have a cooking blog? 
There is a reason for that!!
But every once in a while I get lucky!
Not my picture but found this recipe while blog surfing, tried it
and we loved it!
Has a unique and yummy taste! 
We've had them three times this week since I don't have time to cook right now!



Honey Lime Enchiladas
adapted from Phemomenon
1/3 cup honey
1/4 cup lime juice (about 2 large limes)
2 teaspoons chili powder
1/2 teaspoon ground cumin
2 cloves of garlic, finely minced
1 lb boneless skinless chicken breasts (about 2 large breasts), cooked and shredded
12 corn tortillas
2-3 cups cheese, grated (use what you like: monterey jack, colby and the preshredded Mexican blend are all good options)
28 oz. can of green enchilada sauce (mild or medium, to your taste)
1/2 to 3/4 cup of heavy cream

Place the cooked and shredded chicken in a medium sized bowl. Set aside. In a small bowl whisk together the honey, lime juice, chili powder, cumin and minced garlic.
Pour mixture over the chicken and cover with plastic wrap. Allow to marinate while you prepare the tortillas, about thirty minutes in the refrigerator. Alternatively, place the chicken and mixture in a large Ziploc bag and just let it hang out in the fridge overnight. Less work for you the next day!
Heat the oven to 350. Then heat a large griddle until a drop of water skitters across (about 350 degrees F). Spray the surface with non-stick cooking spray or oil it with a little bit of canola oil in between each round of tortillas. Heat tortillas about 20 seconds on each side till warm and flexible and some golden brown spots have appeared. Remove the tortillas from the griddle and keep them between a couple of paper towels until ready to use.
Spray the sides and bottom of a 9x13-inch baking dish lightly with cooking spray.
In a medium bowl combine the enchilada sauce and the heavy cream. Spread about 3/4 cup of the mixture in the bottom of the oiled baking dish.
Add a large spoonful (about 2 tablespoons) of the chicken mixture to the center of each tortilla in a line. Cover the chicken with a large tablespoon (or big pinch) of cheese, then roll the tortilla up from one side to make a rolled enchilada. Place the enchilada seam side down in the baking dish starting at one end with the long edge parallel to the longest side of the pan so that you end up with two columns of six enchiladas each.
Repeat with the remaining chicken, cheese and tortillas. Add any remaining marinade mixture to the enchilada sauce and cream mixture, if desired.
Pour this mixture over the top of all the enchiladas. Sprinkle with the remaining cheese.
Bake the enchiladas for 30 to 35 minutes, until the cheese is melted and bubbly and starting to brown on top.

Mothering Styles!

While I am busy on Jury Duty I don't have much time for blogging, but I do have some time to do some blog surfing!  So I thought I would share something interesting I found.

Someone posted about this recent article in the Wall Street Journal about Chinese mothers and their parenting style compared to Western mothers. 

Here is an excerpt:

"A lot of people wonder how Chinese parents raise such stereotypically successful kids. They wonder what these parents do to produce so many math whizzes and music prodigies, what it's like inside the family, and whether they could do it too. Well, I can tell them, because I've done it. Here are some things my daughters, Sophia and Louisa, were never allowed to do:

• attend a sleepover
• have a playdate
• be in a school play
• complain about not being in a school play
• watch TV or play computer games
• choose their own extracurricular activities
• get any grade less than an A
• not be the No. 1 student in every subject except gym and drama
• play any instrument other than the piano or violin
• not play the piano or violin."'

Not Funny!

Today was his third ward conference in the past three weeks.  At each he was in charge of a meeting with the bishopric before the meetings, he was the main speaker in their Sacrament meeting, and he finished out the last two hours with each ward as well.
So tonight at dinner I told him jokingly:  Wow, three ward conferences in a row!   But don't worry next week you get a break!  It's Stake Conference!  He didn't think that was very funny!!

I Have A Scanner And I Know How To Use It!

Last night Dan and I were the speakers at our Stake Youth Standards Night.  It is an important evening to which Youth 14 and up were invited along with their parents.   I wanted to make my talk special in some way and so I got the idea of putting together a Power Point presentation up on the big screen that would go along with my talk.  I was very nervous if it would work out or detract if I were fumbling around.  But it worked out great!   And as part of the presentation at the beginning I thought it would be fun to show some pictures of Dan from his younger years, particularly high school so the kids could see that their stake president had been a normal teenager too.
From the comments afterward, everyone especially loved these photos!

We love our trips to the Northern California coast!
